It will be led by a group of chefs that includes Aquiles Chavez, who is innovating traditional Mexican cuisine and serving as a judge on the TV show, “Top Chef Mexico.” When it opens late this year, it will have innovative dishes, such as bone marrow tacos and grasshopper guacamole.
